Chicken Parmesan

This recipe comes from my Aunt Linda. It’s a quick and easy version of chicken parmesan and is one of our favorite weeknight dinners. 

4 boneless and skinless chicken breast halves
1 egg, slightly beaten
½ cup season bread crumbs
2 tablespoons butter
1-3/4 cup spaghetti sauce (we usually use the whole jar though)
½ cup shredded mozzarella cheese (don’t be cheap with the cheese either)
1 tablespoon grated parmesan cheese

Flatten chicken to an even thickness. Dip chicken into egg then into crumbs to coat. In a skillet over medium heat, melt butter and brown chicken on both sides. Add spaghetti sauce, reduce heat. Cover and simmer for 10 minutes. Sprinkle with mozzarella and parmesan cheeses. Cover and simmer 5 minutes or until cheeses melt.  Serve over spaghetti noodles.
